Wild Italian Fire Cookery Course
Immerse yourself in Italy’s culinary favourites with a wild twist, cooked over an open-fire and featuring seasonally and locally inspired British produce.
Our day begins with a gentle meander up to our woodland glen. Along the way, we will gather a selection of wild ingredients, introducing you to the tasty morsels that nature’s larder has to offer.
Our passion for Italian inspired cookery stems from co-founder Beckie’s childhood in Lombardy, Northern Italy, where she inherited a deep culinary appreciation for the country’s approach to quality, seasonal ingredients and the focus on shared dining.
After a restorative brew, we will learn how to make fire using natural tinders, transforming a tiny spark into a flame and giving you the opportunity to slow down into the rhythm of the woods.
Fires crackling and curiosity sparked, we will then introduce you to a medley of Italian inspired dishes with a wild twist, using plenty of fire cookery techniques along the way. These may include our Gozney Roccbox pizza oven, skillet cooking, grilling, spit roasting, dutch oven cooking and pasta or gnocchi making.
How We Teach
A full day of immersive fire fuelled cooking, all of our courses revolve around cookery demonstrations, before we send you off to recreate and enjoy the fruits of your labour!
We will start by cooking up a hearty brunch, followed by a further 4 dishes throughout the day, ranging from little bites perfect for aperitivo to fresh pasta which may be formed into tortellini or cavatelli.
Whether you’re flying solo or joining us with friends and family, the focus of all of our courses is showing you the incredible potential seasonal and local ingredients have in your outdoor kitchen, as well as how to incorporate new techniques into your everyday cooking.
To round off our Wild Italian Fire Cookery Day, we will finish with a homemade and wildly inspired dolce as a little pick me up before you head home full of food and inspiration (and our Fire Cookery Guide and Recipe Pack!).

Our woodland kitchen is fired by FireMade UK pits and hanging frames, fuelled with charcoal from Green Olive Firewood and a mix of locally seasoned hardwood logs.
We may also feature a wide selection of fire equipment, which may include Big Green Egg ceramic cookers, Gozney Roccbox pizza ovens, Kadai fire bowls, spit roast machines and more.
You’ll find us on the Priory Farm Estate in the village of South Nutfield in Surrey. Our woodland classroom is a 5 minute walk from our barn, where we gather before our day in the woods begins.
Beneath the trees, you’ll find our tipi and wooden shelter, which houses our kitchen and dining area. Throughout the seasons, we embrace the great outdoors in all its glory!
Our Wild Italian Fire Cookery course is suitable for anyone who wants to learn to cook over fire, suitable for both fire and food novices, with our passionate and professional tutors guiding you every step of the way.
As with all our courses, our menus are best suited for flexible, adventurous eaters and is not suitable for vegetarians or Gluten-Free individuals.
This course is suitable for guests aged 14+.
