Join us and learn how to infuse fire and smoke into fish and seafood at our Woodland Cookery School.

Course Details

Sourcing sustainable fish and local produce in season, we’ll cover how to cook a selection of fish in our outdoor kitchen, with a focus on encouraging the individual flavours of the fish and shellfish to shine through.

 

After introductions and a restorative cuppa under our teepee, we will spend the day creating a myriad of exciting dishes, offering advice on sourcing and buying your fish and shellfish, as well as guiding you through a variety of fire cookery methods.

 

Fish and seafood take on the smokiness from the grill brilliantly – from coal baking and grilling to hot smoking and asado, there’s no shortage of ways to turn fish into a delicious feast over fire.

 

We’ll focus on celebrating the whole fish from scale-to-tail, sharing multiple ways of preparing a selection of fish, as well as how to make stocks and sauces with your leftovers.

 

Throughout our Fish Over Fire day, we’ll also share how to match the fish with a selection of sauces and accompaniments, pairing each dish with some of our favourite sides packed with punchy flavours and contrasting textures.

 

As part of the day, we’ll also take a gentle meander through the Priory Farm Estate on a guided foraging walk, gathering a selection of wild ingredients, introducing you to the tasty morsels that nature’s larder has to offer.

 

Working with our local fishmonger, our fish will be sustainably and, where possible, locally sourced. Fish featured on the day may include mackerel, sea bass, sea bream, scallops, trout, crayfish, crab, shrimp, hake, sardines and red mullet.

How We Teach

All of our courses revolve around cookery demonstrations, before we send you off to recreate and enjoy the fruits of your labour here in the woods! We will cook a selection of dishes throughout the day, ranging from light bites to hearty feasts!

 

Whether you’re flying solo or joining us with friends and family, the focus of all of our courses is showing you the incredible potential seasonal and local ingredients have in your outdoor kitchen, as well as how to incorporate new techniques into your everyday cooking.

 

To round off our Wild Game Butchery and Cookery day with our very own homemade seasonal marshmallows, toasted over our burning embers as a little pick me up before heading home, full of food and inspiration (and our Fire Cookery Guide and Recipe Pack).

Fire Cookery Course - learn to cook on the Country Fire Kitchen

What do we cook on?

Our woodland kitchen is fired by Country Fire Kitchen pits and hanging frames, fuelled with charcoal from Green Olive Firewood and a mix of locally seasoned hardwood logs.

We may also feature a wide selection of fire equipment, which may include Big Green Egg ceramic cookers, Gozney Roccbox pizza ovens, Kadai fire bowls, spit roast machines and more.

Our Woodland Classroom

You’ll find us on the Priory Farm Estate in the village of South Nutfield in Surrey. Our woodland classroom is a 5 minute walk from our barn, where we gather before our day in the woods begins.

Beneath the trees, you’ll find our tipi and wooden shelter, which houses our kitchen and dining area. Throughout the seasons, we embrace the great outdoors in all its glory!

Who is it suitable for?

Our Fish Over Fire Cookery Course is for those of you who want to gain an understanding of how to turn fish and seafood into delicious feasts over fire.

Our menus are best suited for flexible, adventurous eaters and due to the nature of the event, is not suitable for vegetarians.
