Join us as we head out into the great outdoors for an introduction to foraging – followed by a wildly inspired pizzas fired up in our woodland glen.
Our passion for wild ingredients inspires many of our menus throughout the seasons. When done carefully and sustainably, foraging is a great way of connecting with our natural environment and making the most of the ingredients on our doorstep. You can’t get more local than your nearest hedgerow!
We will start over with a wild tea, before we take a slow-paced meander through fields and woodlands, exploring ingredients built around what is not just seasonally available, but delicious too!
Guiding you through tips on harvesting, correct identification and possible look-alikes, we will also cover how to keep foraging safe and sustainable. This walk is designed for those at the start of their wild food journey, with a focus on how you can start to feature seasonal wilds in your cooking. We’ll provide recipe ideas and tips, as well as a digital foraging guide on everything we cover throughout the walk.
Our foraging walk will be followed by a selection of wildly inspired pizzas and seasonal salads. We’ll be firing up our Gozney Roccbox pizza ovens beneath the trees in our woodland glen, sharing ideas not just on the perfect sourdough pizza base, but on how to turn your pizzas wild to enjoy the foraged flavours of the Summer.
All of our wild toppings are governed by the seasons. From smoked venison shoulders, rabbit ragu, pigeon pastrami, smoked duck to nettle tops, dandelion greens and wild garlic pesto. We stick to traditional flavour combinations embellished with a wild twist!
