Are you interested in sourcing, preparing and cooking wild rabbit? Join us in the barn for our Rabbit Butchery and Cookery evening, including a hands-on butchery workshop and cookery demo, followed by a seasonally inspired supper.
Extremely lean and versatile, rabbit meat lends itself to many recipes, with a slightly gamey flavour. Over the past few years, it has enjoyed a bit of a come-back with many celebrity chefs and restaurants putting it back on their menus. This course is designed to give you the knowledge and inspiration to prepare and cook rabbit at home.
The evening will begin with a demonstration on how to skin and butcher a rabbit, then you will get the chance to dress and butcher your own.
We will then gather around our kitchen for a demonstration, cooking up a selection of dishes for you to enjoy. We’ll graze our way through the evening, including our very favourite Surrey Fried Rabbit and Smoked Rabbit Rillette, enjoyed in a relaxed and informative environment.
