Immerse yourselves in our nose to tail and root to fruit ethos, for a weekend centred on our love of the relaxed farm-to-table feasting experience. Cooking in the great outdoors is one of life’s great pleasures, but one that so many of us don’t get to enjoy often enough.
Our friendly and experienced team will guide you in creating (and most importantly indulging in) unforgettable dishes presented with passion and joy, in the company of new friends. We’ll get away from the hustle and bustle and explore the local countryside as we gather from nature’s bounty on a foraging walk with Sarah from Wild Feast. At the end of the days, we’ll put our feet up and sit around the campfire and enjoy the wood-fired hot tub under the stars.
Whether you're a seasoned outdoor chef, a weekend enthusiast or hoping to try your hand at cooking outdoors for the first time this summer, we've got plenty of ideas to inspire you.
Your weekend will include a mixture of hands-on cookery sessions and demonstrations from The Salt Box team.
Cooking and dining with your fellow guests is an integral part of your cookery experience. You will cook your recipes in pairs, learning the basic skills and key techniques for curing, smoking and pickling, with plenty to taste and try along the way. You’ll also have the opportunity to take a number of items home with you to share with family and friends (or, to devour yourselves!).
Oh, and you won’t have to do any washing up!
Set on five acres of beautiful Kent countryside, Gooseberry Field has stunning views over the haunted Dering Woods of Pluckley. Surrounded by ancient hedgerows and oak trees, there’s an onsite vineyard, vegetable and herb garden, bountiful orchard and wildflower meadow, as well as rare-breed pigs and chickens, for the freshest of ingredients!
Gooseberry Field owners, John and Kerstin have created the perfect setting for feasts over fire with a wood-fired oven, fire pits and traditional hot smoker. To top it off, the site also has a wood-fired hot tub – the ultimate after-dinner treat under the stars. Only 39 minutes by train from St Pancras or an hour’s drive from central London, it’s the perfect weekend getaway.

INTRODUCTION TO CURING
Enjoy a demonstration on curing, one of the oldest traditional food methods, as we start the first cure for our beetroot and gin-cured trout.
Join John and get the confidence and skills to build, light and control a cooking fire – crucial to creating delicious outdoor food. We also look at different types of wood to burn for the ultimate outdoor food.
Let us kick-start your weekend with our welcome feast served around the campfire.
Share a story or two with us around the campfire over a glass of Gooseberry Field cider.
Rise and shine to feed the pigs, then enjoy our ultimate campfire breakfast with home-cured bacon and ample tea and coffee to kick start your day.
Get the know-how on sustainable and safe foraging with Sarah from Wild Feast, as you go on a walk to gather unusual ingredients which may include wild herbs, fruit, flowers and seeds from local hedgerows, fields and woods.
COOKERY SESSION AND LUNCH
Get stuck in as we smoke fish and learn to cook over an open-fire, creating dishes from our foraged ingredients for lunch.
OPEN-FIRE COOKERY SESSION / DINNER
Firstly, we’ll complete the second cure of our fish from Friday evening, ready for Sunday’s breakfast! We’ll then get stuck in for the main event – cooking a spit roast kid-goat, learning to make flatbreads and a wide selection of fire-baked side dishes.
Kick back and sample an array of tipples made from Kent’s bounty of hops and fruits – it is known as ‘The Garden of England’ after all!
Sit back and relax after a busy day of cooking, eating and drinking with an acoustic session around the campfire.
BREAKFAST OF CHAMPIONS
Enjoy the fruits of your labour, with your own cured trout, baked bread and fresh eggs from the Gooseberry Field chickens, served with foraged herb créme fraîche.
Join Kerstin from Gooseberry Field for a leisurely Sunday morning walk exploring the haunted village of Pluckley.
PICKLE LIKE A PRO
We’ll share our secrets to creating perfect quick pickles. We’ll go over supplies, types of brines, and more useful bits of knowledge that will bring your at-home pickling skills to the next level! Each guest will get the chance to create a selection of pickles to take home.
Enjoy a seasonally inspired picnic lunch served in the charming surroundings of Gooseberry Field.
We’ll bid you a jolly farewell and send you on your way with a bag of Salt Box goodies. If you can’t quite face heading home, we can recommend local walks and attractions to explore the local patch for the rest of the day!
